Canadian lager is often described in terms of what it is not — not American light lager, not German Pilsner — but the reality is more textured. The mainstream, dominated by Molson Canadian and Labatt Blue, sits alongside a craft lager scene that has quietly matured over the past decade. Steam Whistle Pilsner, brewed in Toronto to Bavarian standards since 1998, remains the reference point: an all-malt Czech-influenced Pilsner in a country where most lager historically ran on adjuncts.
