Denmark changed brewing forever in 1883. In that year Emil Christian Hansen, working at the Carlsberg Laboratory in Copenhagen, isolated a single strain of pure lager yeast — Saccharomyces carlsbergensis — and gave the industrial lager tradition its scientific foundation. Every clean-fermenting bottom-fermentation lager brewed anywhere in the world today descends, directly or by influence, from that single laboratory achievement.
Modern Danish lager is defined by that heritage: Carlsberg and Tuborg dominate the mainstream, brewing pale Pilsners in the tradition their own laboratory helped create.
