A family lambic brewery in the Anderlecht district of Brussels, founded in 1900, where the beers, tools, machines and process are all of the period — red copper vessels and barrels sometimes more than a century old. In 1978 Jean-Pierre Van Roy founded the Brussels Gueuze Museum around it, at a point when spontaneously fermented beer had fallen out of fashion, specifically to keep the brewery from disappearing. It operates today as a working museum and cannot brew enough to meet demand.
