Fou'Foune

Tap to rate

Bergeron apricots at 300 grams per litre, steeped in lambic of 18 to 20 months. The maceration is short — around five weeks is enough to pull the fruit across — and this beer opens the bottling season towards the end of August. It began in 1998 when an apricot grower nicknamed Foufoune left 300 kilos at the brewery door; today around 4,000 kilos arrive each year.

◌ Aroma

Dominated by the stone fruit character of ripe Bergeron apricots, which mingles with subtle tannic and woody notes from eighteen months of aging in barrel. Underlying complexity reveals winey acidity and a faint farmyard earthiness characteristic of wild yeast fermentation, balanced by gentle noble hop aromatics in the background.

◐ Taste

The palate opens with bright apricot sweetness that yields quickly to pronounced tartness and acidity, the hallmark of Cantillon's dry lambic base. Mid-palate delivers layered fruit intensity without cloying persistence, while gentle tannin grip and a whisper of hop bitterness provide structure and drying contrast. The overall impression is crisp and refreshing, with complexity unfolding across the entire tasting arc.

◑ Finish

Medium-length and persistently dry, with residual apricot notes fading gracefully into a clean acidic cleanse. The aftertaste leaves behind mild tannic warmth and a faint herbaceous suggestion, inviting immediate return to the glass.
