Tasting Notes

AI-generated sensory profile for 50°N - 4°E

Appearance

Pale straw yellow with excellent clarity and a fine, persistent white head that clings to the glass in delicate lacing. The carbonation is evident and lively, with a consistent stream of small bubbles rising through the body. The beer presents with the translucent brilliance characteristic of traditional lambic blends, inviting and visually balanced.

Aroma

The nose is dominated by rich oak and vanillin character from years of cognac cask maturation, layered beneath pronounced funky, earthy notes from the wild yeast fermentation. Subtle vineyard-like complexity emerges with time in the glass, along with faint hints of dried fruit and a gentle solvent-like warmth from the elevated alcohol. The aroma strikes a careful balance between the assertive oak presence and the delicate, barnyard-tinged character of the lambic base.

Taste

Entry is sharp and sour, with bright acidity that frames the palate immediately. Mid-palate reveals the substantial oak and vanilla character alongside funky, peppery notes from prolonged wild fermentation, while the 7% ABV adds noticeable warmth and weight uncommon in standard gueuzes. The finish turns increasingly dry, with lingering oak tannins and a persistent tartness that keeps the beer crisp and food-friendly despite its complexity.

Finish

The finish is long and drying, with oak and cognac wood tannins persisting on the palate. A lingering funky, slightly spicy character combined with residual acidity keeps the aftertaste engaging and prevents any cloying quality.
