🌍 Belgium · Fruit Lambic · One of 15 Fruit Lambics in hopIQ

Merlot grapes from the Côtes de Bourg blended with lambic of 16 to 18 months and macerated around eight weeks, long enough for the beer to draw out the tannins. The November 2022 cuvée was an exception, made from Merlot, Grenache Noir and Syrah. Harvest quality carries straight through: a good year gives more body, a weaker one leaves the lambic more exposed. Bordeaux red, intense and long.

Aroma

Intense dark fruit character dominates—blackcurrant, plum, and black cherry—underscored by wine-like tannin notes from extended maceration with Merlot. Subtle vinous complexity emerges behind the fruit, with earthy undertones and a whisper of oak-derived spice.

Taste

Full-bodied entry carries concentrated dark fruit and sour cherry, with dry tannins building mid-palate. The lambic's characteristic acidity plays against the grape's phenolic structure, creating a long, taut finish. Complexity deepens as it warms, revealing layers of dried fruit and vinous depth.

Finish

Extended and dry, with lingering tannin and acidity that holds without becoming harsh. The aftertaste echoes dark fruit and subtle earthiness, reminiscent of a light red wine.
