Merlot grapes from the Côtes de Bourg blended with lambic of 16 to 18 months and macerated around eight weeks, long enough for the beer to draw out the tannins. The November 2022 cuvée was an exception, made from Merlot, Grenache Noir and Syrah. Harvest quality carries straight through: a good year gives more body, a weaker one leaves the lambic more exposed. Bordeaux red, intense and long. Ranked by flavour match rather than popularity.
