The tart, slightly astringent stalk meets the drier acidity of the lambic — a pairing the brewer describes as obvious to him, given that rhubarb wine is a Belgian classic. Copper coloured, tart and fruity, with the astringency sharpening the finish. It was the first Zwanze, made in tiny quantity in 2008 and repeated at larger volume in 2012.
