Schaerbeek cherries at 300 grams per litre in a two-year lambic, macerated two to three months. These local sour cherries nearly vanished when industrial sweetened lambics switched to syrups and synthetic flavourings. The brewery still secures a tonne or two a year from the few remaining growers, which holds production to a few thousand bottles. Deep red, balanced and strongly fruited.
