Elderflower steeped in a two-year lambic. The flowers are picked by brewery staff from late May into early June, and the maceration lasts only two or three days. The aroma is forceful enough that the brewery has to set a lambic of real character against it. First made as the Zwanze 2009 and kept in production since. Named after Claude Cantillon, grandmother to the Van Roy grandsons.
