Cuvee 2019 from Burning Sky Brewery in Firle, East Sussex, is a thoughtfully crafted farmhouse blend drawing from their house Saison à la Provision — aged in foudre no.1 and Chardonnay barriques — then married with authentic Belgian lambic from the revered Girardin family brewery, before further oak-aging on lambic lees. It pours a hazy golden straw with a delicate, evanescent head. The aroma is immediately expressive — lemon zest, green apple, hay, and a whisper of earthy brett complexity. On the palate, bright acidity weaves through notes of white wine, dried apricot, and dusty grain, while the Girardin lambic lends a beautifully funky, barnyard depth. The finish is long, dry, and pleasantly tart, with lingering citrus and a subtle oak character that rewards contemplative sipping.
