Devil's Rest is a full-strength IPA from Burning Sky Brewery, based in the village of Firle in the heart of the East Sussex South Downs. It pours a rich burnt-orange with a creamy off-white head that lingers invitingly. The aroma is an assertive hit of West Coast character — Simcoe and Centennial hops deliver waves of pine resin, grapefruit peel and bright citrus zest. On the palate it is full-flavoured and confident: juicy tropical fruit up front gives way to a firm, resinous bitterness that builds steadily. The finish is long, dry and satisfyingly bitter, with lingering pine and citrus notes. A bold, uncompromising Sussex IPA that earns its devilish name.
