Organic Viognier grapes blended with lambic averaging 16 to 18 months. The fruit sugar makes this less acidic than most Cantillon beers and gives a rounder body. A tonne of white grapes arrives each October, bought late in the season for maximum ripeness, and every bunch is destemmed by hand; bottling happens without any further blending. It accounts for under five percent of total production.
