The head arrives delicate and white, fading progressively to a thin lace that clings to the glass in fine strands. Carbonation is gentle and persistent, appropriate for a gueuze-inspired blend.

The nose leads with ripe Santa Rosa plum — jammy, sun-warmed, and immediately inviting — layered beneath earthy barnyard funk characteristic of mixed fermentation. Bright citric tartness weaves through wild yeast spice and musty cellar notes, creating depth without harshness. A subtle stone-fruit sweetness anchors the composition.

Juicy plum fruit dominates the palate entry, supported by clean lactic sourness that builds gradually through the mid-palate. A light tannic dryness emerges from the stone fruit itself, balanced by the characteristic complexity of the gueuze blend—funky, slightly musty, with a whisper of citric zest. The body remains light and dry without becoming austere.
