Kernel Brett Pils

Tap to rate

A lager fermented with Brettanomyces wild yeast, brewed in dated editions. The idea goes back to 2024, when the brewery took its dry-hopped Pils and added Brettanomyces to it; the first versions carried a hop name and stood at under five per cent. The current edition is stronger at 5.7 per cent and is poured on draught. In the glass the yeast leads over the hops: lemon and lime citrus with a pronounced funky note.

Pale golden hue with excellent clarity and fine, persistent carbonation. A delicate white head forms and holds with moderate lacing, characteristic of a lager base. The bright, translucent body suggests a clean fermentation despite the wild yeast addition.

◌ Aroma

The nose is dominated by citrus and funk in equal measure. Lemon and lime notes ride atop a pronounced Brett character—earthy, slightly musty, with undertones of dried stone fruit. Noble hop aromatics provide a restrained floral and herbal backdrop, allowing the yeast to take center stage.

◐ Taste

Entry is crisp and refreshing, with zesty citrus acidity framing the palate. The mid-palate reveals the Brett complexity: mild funkiness and a lean, bone-dry character develop without harshness. Bitterness is restrained at 10 IBU, allowing citrus and wild yeast character to interplay rather than compete.
