Wild Gift Apricot presents a hazy, pale golden-straw hue with excellent clarity despite the active wild fermentation. A delicate white head forms and disperses quickly, leaving fine lacing along the glass. The beer shows bright, natural carbonation that animates the body with fine bubbles.

◌ Aroma

The nose leads with ripe stone fruit—sun-warmed apricot and peach—layered beneath a subtle lemon zest brightness. Beneath the fruit sits a gentle farmyard funk: earthy, slightly leathery notes from the Brettanomyces strains, reminiscent of a Sussex barn after rain. The aromatic profile is delicate and inviting rather than aggressive.

◐ Taste

Entry is crisp and refreshingly tart, with lactic acidity lifting the soft, juicy apricot sweetness across the palate. The wild yeast character emerges as a subtle leathery and earthy complexity that prevents the fruit from becoming cloying. The body remains light yet lively, with enough structure to hold the interplay of acidity, fruit, and funk.

The finish is clean and bracingly dry, with the apricot and funk lingering pleasantly without heaviness. A whisper of tannic dryness frames the aftertaste, leaving the palate refreshed and ready for the next sip.
