Coolship Cerise, first released in December 2011, is Allagash's spontaneously fermented beer aged on Maine-grown Montmorency and Balaton cherries. The wort gathers wild yeast as it cools in the open coolship, then ferments and develops in oak wine barrels for up to two years before two pounds of cherries per gallon are added. It pours pale red to ruby. Fresh sour cherry leads, rounded out by pie spice, oak and a hint of apricot, with lemon and a light earthy funk underneath; the profile is tart, crisp and dry.
