This West Sussex craft house ages the beer in oak vessels using a trinity of cultures — saison yeast, brettanomyces, and lactobacillus — to coax out remarkable complexity. It pours a hazy, pale golden straw with a delicate, ephemeral head. The aroma drifts between lemon zest, hay, white pepper, and a whisper of barnyard funk.
