Mountain Goat was founded in 1997 in Melbourne by Cam Hines and Dave Bonighton, two homebrewing friends who began by renting capacity at other breweries in Geelong and Mirboo North. The first commercial release, Hightail Ale, appeared in October 1997. The brewery moved into its own premises in Richmond in 1999 and into the North Street warehouse it still occupies in 2004. Asahi bought the company in 2015; core-range volume is brewed in Laverton, while Richmond handles small batches and barrel work.
