Birrone
Birrone is a craft brewery in Isola Vicentina, in the province of Vicenza, founded in 2008 by Simone Dal Cortivo, who started out as a homebrewer. Its range is built around bottom-fermented beers in the German tradition, joined by a number of ales and a line of experimental brews. None of the beers is filtered or pasteurised, and they are kept chilled from tank to tap. The brewery moved to a new site in 2013 and later installed a 60-hectolitre brewhouse. It grows most of its own raw materials, among them the local Marano maize, and runs its own pubs between Vicenza and Padua.

How we measure this
Two thresholds are at work here:
- The signature list shows notes that recur in at least 6% of this brewery's beers. A low bar — enough to flag a pattern, not high enough to call it an exclusive trait.
- The peer comparison below shows only notes where this brewery's coverage differs from similar breweries by at least 20 percentage points. A higher bar — enough to call a real difference, not a nudge.
A note can appear on the signature list without appearing in the peer comparison: it recurs here, but similar breweries do the same thing.
