12° came out of a trip to the Czech Republic and the unfiltered cellar lagers tasted there. It is brewed from pale malt only, using a decoction mash, and that method gives the malt a tone reminiscent of honey. Saaz hops, typical of the Pils brewed there, set a rough-edged counterweight. The name follows the Czech habit of calling a beer by the sugar content of its wort before fermentation, in degrees Plato. Bottom-fermented, 4.8 %.
