Polly's Brew Co. was founded in January 2018 by Sean Ayling at Holland Farm in Mold, Flintshire, Wales, initially as a two-person operation brewing in a converted stable. The brewery launched under the name Loka Polly but rebranded to Polly's Brew Co. in May 2019 following a cease-and-desist from Swedish soft drink brand Loka. Focused exclusively on keg and can formats, the brewery produces hop-forward, fresh modern beers and has grown from brewing once every eleven days to a team of fifteen employees. Polly's is widely regarded as the highest-rated brewery in Wales and exports to nearly thirty countries.
