Moon Dog was founded in 2010 by brothers Josh and Jake Uljans and their school friend Karl van Buuren in a back-street warehouse in Abbotsford, Melbourne, on a brewhouse assembled from former dairy equipment. Early releases leaned on barrel ageing and unusual ingredients; a core range followed from late 2015. Since 2019 production has been based at Moon Dog World, a former Nylex plant in Preston with a 100-hectolitre brewhouse. The brewery is independent and still owned by its founders.
