Beak Brewery
Beak began as a nomadic project of food and drink writer Daniel Tapper, who spent several years brewing small batches at other British breweries before the company built its own site on the Cliffe Industrial Estate in Lewes, East Sussex, in 2020. A taproom with fifteen keg lines and a street-food canteen sit next to the brewhouse. The output is dominated by hazy, oat- and wheat-heavy pale ales, IPAs and double IPAs, released in a steady stream of new names around a small permanent line led by Parade; a Czech-style pilsner, a witbier and imperial stouts round it out.

How we measure this
Two thresholds are at work here:
- The signature list shows notes that recur in at least 6% of this brewery's beers. A low bar — enough to flag a pattern, not high enough to call it an exclusive trait.
- The peer comparison below shows only notes where this brewery's coverage differs from similar breweries by at least 20 percentage points. A higher bar — enough to call a real difference, not a nudge.
A note can appear on the signature list without appearing in the peer comparison: it recurs here, but similar breweries do the same thing.
