Räim
Räim is a double IPA made in collaboration with an Estonian brewery. Recipe and technique follow the West Coast school, but the yeast is a New England strain. A blend of New Zealand and American hops is used in massive doses at every stage, including a triple dry hop. The beer is deep gold, bitter and only faintly hazy, with an explosive citrus and tropical hop character, and the yeast makes it notably soft.
