Aalis

Tap to rate

Aalis is an imperial stout brewed with a double mash from English and German malts and oat flakes. Wort production takes eighteen hours, including a very long boil that concentrates the wort to a high starting gravity. The result is black, extremely dense and only lightly carbonated, with a full, oily, velvety body. Coffee, toffee and caramel lead, with dark chocolate behind them.

Tasting Notes

AI-generated sensory profile for Aalis

◎ Appearance

Aalis presents as a deep, opaque black with no light penetration, reflecting the concentrated wort and high malt bill. The head is modest and tight, settling quickly into a thin collar with deliberate, restrained carbonation that emphasizes the beer's dense, viscous character. Lacing clings softly to the glass in delicate, intermittent strands.

◌ Aroma

The nose leads with roasted coffee and dark malt depth, followed by warm toffee and caramel notes that reflect the extended boil and English malt backbone. Behind these lies a subtle dark chocolate undertone, with a faint char and a whisper of oak-like warmth from the high alcohol integration. No harsh alcohol burn; the aromatics remain balanced and inviting.

◐ Taste

The palate opens with concentrated coffee and toffee sweetness, immediately followed by a velvety, almost creamy mouthfeel driven by the oat flakes and oily body. Dark chocolate and subtle cocoa bitterness emerge mid-palate, anchored by 65 IBUs of measured hop bitterness that prevents cloying sweetness without asserting itself dominantly. The finish carries a dry, lingering roast quality with lingering chocolate notes.

◑ Finish

The finish is long and warming, with dry roasted malt and fading chocolate tannins that build gradually rather than strike sharply. Alcohol warmth integrates seamlessly into the aftertaste, leaving a pleasant, contemplative fade.
