Reddish brown in the glass with good clarity and a fine, persistent head that leaves delicate lacing on the walls. The color sits at the darker end of the red spectrum, suggesting both oxidative aging and the depth of the Malz bill. Carbonation is moderate and even.

The nose opens with tart cherry and dried fruit notes, undercut by earthy, funky layers from the wild fermentation and barrel maturation. Subtle biscuit-like Malz character provides a warm, toasty foundation beneath the acidity. There is a quiet, almost herbal edge that speaks to the barrel's previous life and the wine-like complexity of the blend.

Entry is bright and mouth-puckering with clean acidity that frames tart cherry and dark fruit. The mid-palate reveals savoury, earthy undertones balanced by soft Malz sweetness, while minimal bitterness (6 IBU) allows the fermentation character and barrel influence to dominate. Finish is dry and crisp, with the sourness and funk lingering without harshness.
