Brauerei Grasser
Brauerei Grasser is a family brewery and inn in Huppendorf, part of Königsfeld on the Franconian Jura in Upper Franconia. Brewing in the village is documented for more than 500 years, and the family took over the brewery on the present estate around 1750. Johannes Grasser has led it since 1995, now with his son Andreas; both are master brewers. Barley comes directly from local farmers and is malted nearby, and the water is drawn from a dry valley close to the village. Four year-round beers are joined by seasonal brews made in small batches.

How we measure this
Two thresholds are at work here:
- The signature list shows notes that recur in at least 6% of this brewery's beers. A low bar — enough to flag a pattern, not high enough to call it an exclusive trait.
- The peer comparison below shows only notes where this brewery's coverage differs from similar breweries by at least 20 percentage points. A higher bar — enough to call a real difference, not a nudge.
A note can appear on the signature list without appearing in the peer comparison: it recurs here, but similar breweries do the same thing.
Huppendorfer Zwickel
