The Winterweizen is the brewery's stronger seasonal wheat beer, on tap from the start of January. It is an amber, cloudy Hefeweizen brewed with 60 percent wheat malt and a share of caramel malt, at 13.8 °P. The house top-fermenting yeast contributes delicate banana and clove, which sit against a malty sweetness of caramel and bread crust. The body is medium-full and soft from the yeast, and the banana character stays prominent without turning cloying.
