★ Award winningKnown for a full range of styles

A family brewery in the Bavarian village of Aying, about 25 kilometres south-east of Munich, founded in 1878 by Johann Liebhard on an inn estate his family had held since around 1810. His descendants, the Inselkammer family, still run it in the sixth generation. The house brews to the 1516 purity law using barley from surrounding farms, its own spring water and Hallertau aroma hops, and keeps an unusually broad range for its size: pale and dark lagers, wheat beers, seasonal bocks and a doppelbock. Beers go to Italy, the United States and across Europe.

How we measure this

Two thresholds are at work here:

  • The signature list shows notes that recur in at least 6% of this brewery's beers. A low bar — enough to flag a pattern, not high enough to call it an exclusive trait.
  • The peer comparison below shows only notes where this brewery's coverage differs from similar breweries by at least 20 percentage points. A higher bar — enough to call a real difference, not a nudge.

A note can appear on the signature list without appearing in the peer comparison: it recurs here, but similar breweries do the same thing.
