Moinette Bio was launched in 1990, when manager Marc Rosier moved part of the production to organic ingredients. At 7.5 % it is lighter and a little mellower than Moinette Blonde, with a less pronounced phenolic character. The nose shows yellow fruit, orange and clove over malty notes and a herbal touch from the fine hops. Soft body, fruit and bitterness stay in balance and keep it refreshing, while long refermentation in the bottle adds depth. In the United States it is sold as Forêt.
