Vermillion Sky

◎ Aussehen

Vermillion Sky presents as a deep, nearly opaque black with a thin layer of tan foam that recedes slowly. The beer shows minimal light transmission even when held to a strong source, characteristic of a heavily roasted imperial stout aged in charred oak. Carbonation is gentle and restrained, allowing the dense body to dominate the visual impression.

◌ Aroma

The nose opens with roasted dark malt and tart cherry, layered beneath soft notes of vanilla and toasted oak from three years in the charred foeder. Mixed fermentation contributes a subtle funky complexity without dominating, while the cherry adjunct provides bright, slightly tart character. The overall impression balances dark, woody warmth with fermented fruit acidity.

◐ Geschmack

The palate enters with dark malt and cherry, followed quickly by vanilla and toasted oak character in the mid-palate. Balanced tartness from the mixed fermentation lifts the rich, full body without becoming sharp or astringent. The 8.4% ABV adds gentle warming, while the 65 IBU provides measured bitter structure that integrates with the sourness rather than standing apart.

◑ Abgang

The finish is lengthy and dry, with tartness persisting throughout the aftertaste. Vanilla and oak linger gently as the cherry fades, leaving a pleasant acidity that invites another sip.
