Rebelse Strop presents a pale golden hue with excellent clarity and a fine, persistent white head that clings delicately to the glass. The carbonation is lively and well-integrated, creating a steady stream of small bubbles that sustains the foam collar throughout the tasting.

◌ Aroma

The nose opens with pronounced earthy and funky character, the signature of Brettanomyces at work. Bright citrus and stone fruit esters emerge beneath, accompanied by a subtle spicy, peppery quality that evolves as the beer warms in the glass.

Young Rebelse Strop displays fruity notes and assertive hop bitterness balanced by a gentle acidity that keeps the palate refreshing. Over time, the character softens and rounds considerably, allowing the subtle funky esters and malt sweetness to integrate more harmoniously, though the dry, bitter backbone persists throughout.

The finish is dry and persistently bitter, with a clean, mineral-like aftertaste that lingers moderately. The funky, wild-yeast character fades gradually, leaving behind a pleasant dryness.
