Matilda Bay was founded in Fremantle in 1983 by Phil Sexton and partners and brewed its first beer in 1984 at the Sail and Anchor Hotel, the first new brewery opened in Australia since the Second World War. Redback followed as the country's first wheat beer. Carlton & United Breweries, now part of Asahi, took full control in 1990, and production moved to Melbourne and later to Cascade in Hobart. A brewpub in Healesville ran from 2019 to 2024; since then the beers, including the Yak range, are brewed at other Asahi breweries.
