Rochefort 6

Trappistes Rochefort
Tap to rate
🌍 Belgium · Dubbel · One of 10 Dubbels in hopIQ

The oldest beer of the current range, introduced in 1950 and once simply called the Trappiste. It pours ruby to mahogany with a light head and starts from about 17.5 °Plato. Pilsner malt, some crystal malt and cassonade sugar form the base, with a single hop addition and a touch of coriander. Raisin, dried plum, caramel and bread crust lead the aroma, backed by the house yeast's fruity, peppery spice and a faint herbal edge. High attenuation keeps the body moderate and the finish dry and gently bitter.

◌ Aroma

The nose opens with dried stone fruit—raisin and plum—layered over toasted bread crust and light caramel notes. Behind these, the Rochefort house yeast contributes a fruity, peppery spice character, while a faint herbal edge—likely from the single hop addition and coriander—adds subtle complexity without dominating the profile.

◐ Taste

The palate opens clean and balanced, with malt sweetness from Pilsner and crystal malts meeting the cassonade sugar's subtle molasses notes. Mid-palate carries the fruity-peppery yeast character through, while moderate body avoids heaviness despite the 7.5% ABV. The finish turns dry and gently bitter, with the single hop addition and coriander providing a refined, lingering herbal close.

◑ Finish

The finish is notably dry, with high attenuation leaving minimal residual sweetness. A gentle bitterness and herbal spice persist into the aftertaste, fading slowly with a clean, slightly peppery farewell.
