First brewed in the 1950s for the Christmas season and nicknamed the Spéciale, Rochefort 8 soon joined the permanent range and is the abbey's best-selling beer in Belgium. It pours dark brown under an off-white head, from about 19 °Plato. Caramel and dark berries open the aroma, followed by fig, date, brown sugar and a leathery, spicy yeast note with hints of coriander. The body is firm but not heavy, since the beer ferments out almost completely, and the finish turns dry with a light, lingering bitterness.
