Bersalis Tripel Oak Aged

Tap to rate

Brett character and a refreshing sourness give this wood-aged tripel a new dimension. Bersalis Tripel ripens for 22 months on wooden barrels and foeders in the lambic cellars, where lactic bacteria and wild yeasts in the air and the wood set off a spontaneous second fermentation. Golden yellow, brewed with wheat and barley malt, hops, yeast and spices, 10.5 % ABV, in 37.5 cl bottles; editions run from 2014 to 2026.

Tasting Notes

AI-generated sensory profile for Bersalis Tripel Oak Aged

◎ Appearance

Golden yellow with excellent clarity and a fine, persistent white head that clings to the glass walls with delicate lacing. The 22-month barrel aging and spontaneous fermentation are barely evident in the visual presentation—this is a clean, luminous pour that betrays nothing of the complex microbial work within.

◌ Aroma

The nose opens with dry, woody oak and light vanilla notes layered beneath fruity esters and a distinct herbal-spicy character from the added spices. Wild yeast and lactic fermentation contribute a subtle funk—earthy, slightly musty undertones—while wheat malt softens the edges with grain sweetness. The overall impression is one of balance: wood and funk do not dominate; instead, they frame a refined, complex aromatic profile.

◐ Taste

Entry is dry and crisp, with moderate sourness from lactic acid providing immediate refreshment against a medium body. Mid-palate reveals layered oak character, a yeasty, slightly spicy complexity, and tart stone-fruit notes that evolve through wheat malt roundness. The 10.5% ABV is present but restrained, warming rather than dominating, while low IBU (10) means bitterness plays only a supporting role to the interplay of oak, sourness, and funky fermentation character.

◑ Finish

The finish is dry and lingering, with sourness and oak tannins carrying through to a clean, slightly woody aftertaste. A subtle spicy warmth persists, leaving the palate refreshed rather than fatigued despite the extended aging.
