Gipfeltreffen Sour Blend

Tap to rate

Born from the 2023 Gipfeltreffen, a dark wheat beer brewed with Orcabräu, Guggenbräu and Bierdoktor. Part of it went into a barrique in Guggenbräu's sour cellar in northern Bolzano, where wild microorganisms fermented the remaining extract. The result is a balanced barrel-aged sour beer with complex depth, elegant acidity and a fine barrique note.

◌ Aroma

The nose leads with bright acidity and subtle wood notes from extended barrel aging, followed by the soft grain foundation of the original wheat beer. Wild fermentation brings earthy, funky undertones—musty earth and a whisper of leather—that integrate seamlessly with the oak. The overall profile is sophisticated rather than aggressive, with good aromatic balance.

◐ Taste

The palate opens tart and refreshing, with the sour character front and center, balanced by a creamy mouthfeel from the wheat base. Mid-palate develops layered oak influence and subtle wild yeast complexity, maintaining elegance without harshness. The moderate bitrate (10 IBU) stays well in the background, allowing the interplay of acidity, grain, and barrel character to dominate.

◑ Finish

Dry and lingering, with the acidity and oak notes persisting gently into the aftertaste. A faint funky minerality rounds out the close.
