Wild Mountain with Raspberry

Tap to rate

Funky and tart, reminiscent of homemade berry jam, with heaps of raspberries. Wild Mountain with Raspberry is a 5.8% ABV mixed culture ale. The brewers fermented a wort of Pils and wheat in French oak puncheons with a wild, funky mixed culture, split the batch into two beers and packed this half with raspberries, picking, as they put it, wild mountain berries for everyone.

◎ Appearance

Pale straw to light gold in color with excellent clarity, showing the luminous transparency characteristic of a Pils-wheat base. ◌ Aroma

The nose is dominated by tart raspberry and wild berry fruit, mingling with earthy, funky notes from the mixed culture fermentation. Beneath the fruit sits a subtle toasted oak character and a faint wheat grain note, while a gentle acidity frames the entire profile. There is no harsh vinegar quality—rather, a balanced wild fermentation character that suggests fermentation complexity.

◐ Taste

Entry is bright and tart, with natural raspberry and wild berry flavors leading the palate. Mid-palate reveals the mixed culture's funky character, a slight woody tannin structure from French oak contact, and a drying wheat note that prevents sweetness. The bitterness is restrained at 15 IBU, allowing the fermentation character and fruit to remain at the fore, while acidity provides shape and cut rather than harshness.

◑ Finish

The finish is dry and relatively short, fading into a lingering, peppery wild yeast note. Acidity and a subtle astringency from both the fruit and oak persist pleasantly on the palate without becoming aggressive.
