Pass the Balaton

Tap to rate

Bright, tart and subtly funky: a cherry red saison. Pass the Balaton is a 6% ABV mixed culture sour brewed with wild cherry blossom yeast and conditioned on loads of Balaton cherries, which the brewers eased into the mixed culture barrels one by one before sunrise in the R&D Brewery. Hopped with Motueka over Rahr Pils, flaked wheat, white wheat and acidulated malt.

◌ Aroma

The nose opens with prominent stone fruit and wild cherry, underpinned by subtle floral notes from the cherry blossom yeast. A gentle funk emerges beneath—earthy and farmyard-like—while the Motueka hop contributes delicate citrus and herbal undertones. White wheat adds a soft, grain-forward sweetness that grounds the more volatile aromatics.

◐ Taste

Entry is crisp and immediately tart, with bright acidity from the mixed culture fermentation cutting across the palate. Mid-palate reveals layered cherry fruit and a gentle funkiness that builds complexity without overwhelming. The wheat base softens the structure, while Motueka hops contribute a herbal, slightly resinous finish that keeps bitterness restrained at just 10 IBU.

◑ Finish

The finish dries rapidly, leaving behind a lingering tart cherry character and a subtle funky aftertaste. The low ABV and gentle carbonation allow the finish to feel clean and refreshing rather than astringent.
