Mosaic DDH Foudre Ale

Tap to rate

A mature base of oak, funk and bright acidity from foudre-aged sour ales meets a huge 32 g/L dry hop of Mosaic with mango, blueberry and citrus, an age-and-energy balance. The ales were blended from July 2021, and the 6.5% beer is one of Cloudwater's annual Barrel Project releases. The result puts fresh vibrancy over the beer's depth and complexity.

The nose leads with mature oak and earthy funk from the foudre aging, creating a deep, cellar-like foundation. ◐ Taste

Entry is sharp and clean, with a measured sour acidity that frames the palate without overwhelming. Mid-palate reveals layered oak tannins, subtle wild yeast funk, and the Mosaic hop's tropical and citrus notes working in concert. Bitterness is restrained at 10 IBU, allowing the interplay of acid, oak, and fruit to dominate rather than compete.
