Black Lightning is a black IPA that the brewery makes occasionally rather than all year. Willamette, Chinook, Cascade, Summit and Centennial go in from the mash through to the fermenter, in about twice the usual quantity; an adjusted water profile keeps the 56 IBU rounded instead of sharp. Dark malt supplies the colour and only a limited roast flavour, a touch of coffee and dark chocolate, with no astringency. It pours opaque under a creamy head and looks like a stout, while the aroma is that of a big American-style IPA.
