The color reflects the wine and spirit aging, suggesting the complexity held within. Carbonation is moderate and well-integrated, befitting a contemplative barleywine.

◌ Aroma

The nose leads with floral and orchard fruit notes—red stone fruits from the Banyuls and red wine wood aging—layered with almond and subtle toffee sweetness. Underlying malz character provides a biscuity foundation, while hints of vanilla and oak from the bourbon and spirit aging emerge on deeper inhalation. A whisper of spiced warmth rounds the profile without dominating.

Entry is rich and sweet, with ripe red fruit and caramel meeting a soft, bready malz body. Mid-palate develops a compelling sweet-savoury tension, where toffee and spiced notes (hinting at carrot cake complexity) play against 50 IBU of balanced bitterness.
