2019 Barley Wine

◎ Appearance

Deep amber to chestnut brown, with excellent clarity and a fine, persistent head that leaves distinct lacing on the glass. The body shows the density and weight expected of a well-crafted barleywine, with moderate carbonation that supports the visual structure without appearing aggressive.

◌ Aroma

The nose opens with pronounced wood and sherry notes, layered beneath a rich malty foundation. Dark dried fruit—raisins and plums—emerges alongside subtle caramel sweetness, while the elevated alcohol is present but integrated, lending a warming presence without harshness.

◐ Taste

Palate entry is smooth and voluptuous, with concentrated malt sweetness and caramel character dominating the mid-palate. The 30 IBU of bitterness is restrained and supportive rather than confrontational, allowing the dark fruit, boozy warmth, and wood undertones to develop fully. The mouthfeel is rich and enveloping throughout.

◑ Finish

The finish is long and evolving, with lingering caramel and dried-fruit notes that fade gracefully into a gentle, warming alcohol fade. A subtle wood dryness emerges on the back palate, inviting contemplative sipping.

Serve at 12–16°C for the best flavour balance and aroma expression.
