Grimm Artisanal Ales was founded in Brooklyn in 2013 by Joe and Lauren Grimm, who had spent close to ten years homebrewing before going commercial. For its first five years the brewery had no brewhouse of its own: recipes were developed in the couple's Gowanus apartment and brewed at partner breweries. In June 2018 Grimm opened its own production brewery and taproom in East Williamsburg, with a share of the space given over to oak barrels for sour beer. The range spans hazy and West Coast IPAs, decoction-mashed lagers, a Bavarian-style weissbier, mixed-fermentation sours and imperial stouts.
