White Rabbit White Ale

◎ Appearance

A pale straw to pale gold color, deliberately hazy from unmalted wheat and suspended yeast. The cloudiness is soft and fine, lending an inviting, rustic character. A fluffy white head forms readily and maintains good retention with fine lacing.

◌ Aroma

The nose leads with bright citrus peel and gentle spice, underpinned by the wheat's subtle grain sweetness. Belgian yeast contributes faint clove and stone-fruit notes without dominating. Coriander seed and juniper berry add herbal complexity, while bitter orange peel introduces a light exotic edge.

◐ Taste

The palate opens soft and wheat-forward, with a silky mouthfeel sustained by the unmalted wheat. Mid-palate brightness emerges from lively tartness and citrus notes, while coriander and spice build a gentle complexity. A restrained bitterness threads through the finish without overwhelming the delicate balance.

◑ Finish

Medium-short and clean, with the tartness lingering slightly as the herbal spice fades. A whisper of bitterness and orange zest remains on the palate, leaving a refreshing, crisp impression.

Serve cold to preserve the delicate citrus and spice aromas. Too warm and the yeast esters become heavy — too cold and the coriander disappears.
