Evergreen

◎ Appearance

Evergreen presents a pale golden hue characteristic of the West Coast IPA style. The beer displays excellent clarity with bright, clean transparency and forms a white head that maintains steady retention and lacing. Carbonation appears crisp and well-integrated, with fine bubbles rising steadily.

◌ Aroma

The nose is dominated by resinous hop character, with Citra Cryo delivering concentrated citrus notes—lemon zest and grapefruit—without the leafy green quality of whole pellets. Simcoe contributes a distinctive pine and piney resin backdrop, grounding the bright citrus elements. A clean malt foundation supports the aromatic profile without intrusive grain or yeast notes.

◐ Taste

The palate opens crisp and dry, with citrus notes from Citra Cryo following immediately into resinous, piney mid-palate complexity supplied by Simcoe. Bitterness is present and well-integrated, neither sharp nor lingering aggressively, balancing the dry character throughout. The malt provides minimal sweetness, allowing hop expression to dominate cleanly without astringency.

◑ Finish

The finish is dry and relatively short, trailing off cleanly with residual piney and citrus notes fading gracefully. A light resinous aftertaste persists briefly without becoming sticky or cloying.

Serve at 8–11°C for the best flavour balance and aroma expression.

The curved shape concentrates hop aromas and supports a thick head. Essential for aromatic ales and IPAs where the nose is half the experience.
