An alcohol-free pale ale fermented with a yeast that cannot convert maltose, so only a small share of the sugars turns into alcohol and the beer lands below 0.5 per cent. Pilsner and pale malt leave a light body with noticeable residual sweetness. Citra and Ekuanot supply grapefruit, mango and lemon zest over a soft rather than sharp bitterness. Fifteen trial brews on yeast, hops and process preceded the recipe.
