Sauvin Brut presents a pale straw-gold hue of remarkable clarity, with light refracting cleanly through the glass. A fine, persistent white head crowns the pour, while lively effervescence rises continuously, creating a visual impression of champagne-like vivacity and refinement.

◌ Aroma

The nose opens with striking aromatic precision from Nelson Sauvin hops, expressing white grape, gooseberry, and passionfruit alongside a subtle sauvignon blanc-like character. This wine-inspired profile sits cleanly in the glass without oxidative or funky notes, creating an immediate sense of freshness and terroir-driven expression.

The brut fermentation process delivers a bone-dry palate that strips away residual sweetness, allowing bright citrus and tropical fruit flavours to emerge with crystalline clarity. The spritzy, champagne-like carbonation carries the hop character through the mid-palate with elegant precision, while 30 IBU provide gentle bitterness that integrates rather than dominates, reinforcing the wine-like structure.

The finish is exceptionally clean and crisp, with a refreshingly short fade that leaves no heavy residue. A mineral-edged dryness lingers, reinforcing the austere, wine-inspired character without astringency.
