◎ Appearance

Pours a hazy golden straw colour with a fine, delicate head that settles to a thin collar of foam. The haziness speaks to the wild yeast fermentation and lack of filtration, while the light carbonation creates a soft effervescence that dances gently in the glass. Lacing clings moderately to the glass as the beer is consumed.

◌ Aroma

The nose leads with delicate orchard blossom and white pepper, layered beneath which sit dried citrus peel and subtle boil spice. Fermentation in French Chardonnay barriques introduces understated oak character alongside a gentle lactic tang that recalls wine cellar complexity. A whisper of earthy funk from the wild yeast adds rusticity without dominating.

◐ Taste

The palate is elegant and dry with a lively, gently tart structure that evolves across the mid-palate. Stone fruit and earthy funk layer onto a mineral backbone, while the 28 IBU provide balanced, restrained bitterness rather than aggression. The beer carries a wine-like dryness and complexity from barrel ageing, with a crisp entry that never becomes thin.

◑ Finish

The finish is long and refreshingly rustic, leaving behind mineral notes and a faint lactic brightness that lingers pleasantly on the palate. The dryness persists without harshness, and the farmhouse character remains present to the very end.

Serve at 8–12°C. Saison is refreshing but complex — cold works, but slightly warmer shows its farmhouse character.
